J&B

이탈리아인 지아카모 저스테리니(Justerini)는 기회를 찾아 그리고 한눈에 반해버린 아름다운 영국인 오페라 가수를 찾아 영국에 오게 된다. 그가 여가수의 마음을 사로잡기 위해 노력하는 동안 그의 동업자는 이미 왕실에 주류를 공급하는 주류회사를 인수하는 사업수완을 발휘했지만, 동업자는 불의의 사고로 세상을 떠나고, 사랑을 쟁취한 저스테리니는 별 미련없이 이탈리아로 돌아와 버린다. 공중에 떠버린 회사를 인수한 알프레드 브룩수(Brooks)가 저스테리니와 자신의 성을 따서 J&B라고 회사이름을 지었던 것이 현재의 J&B의 역사가 시작된 것이다.

UDV로 합병되기 이전의 IDV의 대표 브랜드. 지금도 UDV의 대표 상품 중 하나입니다. 제품명은 원 제조사인 Justerini & Brooks Ltd에서 따왔습니다. 미국에서 큰 인기를 얻으며 전 세계적으로 유명해진 제품. 전형적인 가벼운 스타일의 soft-tasting 제품으로 초록색 병 때문인지는 몰라도 입안에서 상쾌한 느낌이 들고 혀 위에서 약간 단 맛을 느낄 수 있으며 끝 여운이 대단히 길게 남습니다. 연한 황금색의 Pale Color.

스탠다드 제품인 Rare, 특히 국내에서 대단히 인기를 끈 멋진 검은 병의 12년산 Jet, 15년급의 Reserve 등의 제품이 있습니다.

"검은 보석"을 뜻하는 Jet Stone에서 이름을 따온 이 술은 250년 전통의 J&B사로부터 출시되었다. "J&B Jet"는 최소 12년 이상 숙성된 후 엄선된 40여 가지의 몰트 위스키와 그레인 위스키를 블랜딩해 탄생된 술이다. 사용된 몰트 위스키의 80% 이상이 스코틀랜드 최상급 몰트 위스키 생산지역인 스페이사이드에서 15년 이상 숙성된 것들이기 때문에 맛이 깊다. 다른 인공색소를 첨가하지 않아 연한 호박색을 띠고 있다.

History

The World Sees the Birth of a Baby Brand (18th Century)
Love and opera brought Giacomo Justerini from Bologna to England, his affections for Margherita Bellino the opera singer were so all encompassing that he scraped together all his lira and set sail for sunny London where she welcomed him with unopened arms and a romance wasn"t born. So, broken-hearted, he quickly forgot her and set himself up as a wine merchant with an English partner, George Johnson. In a moment of rare sanity George Ⅲ honoured Justerini with the first of his eight Royal Warrants. By 1779 Justerini & Johnson were selling whisky and were advertising in the Morning Post. A headline brand was born.

J&B Prepares to Take the World by Storm (19th Century)
By 1823 no less than 14,000 illicit stills had been discovered and the government, with white lightning speed, introduced a realistic system with an annual licence fee of £10, that"s about $18. Illegal production hit the slip and the modern Scotch whisky industry reared its lovely head. Production of whisky soon became concentrated in the big 50 distilleries, the ones that had a gushful of spring water and primo supplies of peat and barley. The little guys couldn"t hack it and soon were out of the game, the final nail being the 1831 introduction of the Patent, or Coffey Still.

1831 was red letter year for us because that"s when Alfred Brooks bought Justerini & Johnson and the world sat back, glass in hand, and saw the creation of Justerini & Brooks. And, party nights all over the world lived to enjoy it.

A century of serious ups and downs, but one thing is certain- when the ups were happening, the J&B was most probably being poured.

The first exports of J&B were welcomed with open mouths by the USA, with subsequent sales reaching 3 million cases. That"s 36 million bottles and that"s one helluva party!

J&B is now Europe"s No.1 and the world"s second biggest selling Scotch Whisky. And once you taste it, you too will be over the moon.





Location & Heritage

A Rare Location. A Fine Heritage.
Justerini & Brooks opened for business in 1749 and supplied wines and spirits to the British Royal Family during eight successive reigns, and as they reigned, they poured. J&B is created for world where taste and quality are everything. Our four distilleries in the renowned Speyside region of Scotland are :

Knockando (Cnoc-an-dhu...meaning 「Little Black Hill」in Gaelic) built in 1898 and is situated in the Highlands of Scotland, upon a steep bank overlooking the River Spey.

Strathmill Distillery is on the outskirts of Keith beside the River Isla, it was established in 1831 as an oatmeal mill, then rebuilt as a distillery in 1891.

Glen Spey distillery was built and put into production by James Stuart in 1885, prior to this it was known as Mills of Rothes and, like Strathmill, appears to have operated for milling cereals.

Auchroisk"s name is taken from a nearby farm and means 「the ford of the red stream」. Completed in 1974 the distillery has won major awards for its design and is widely regarded as a true state-of-the-art distillery which is second to none in the Speyside area.

Distilleries
The four J&B distilleries are embraced by the Speysied region. Set in the valley of the River Spey in the Scottish Highlands, J&B"s four distilleries are right in the very heart of the most famous area in the world for Scotch whisky making. They are Knockando, Auchroisk, Strathmill and Glen Spey.

Water
Only natural spring water is used in the making of J&B Rare. It"s soft slightly peaty character fashions the subtle delicate flavour of the whiskies on which J&B Rare is founded.

Casks
By law, all whisky distilled in Scotland must be matured in Scotland, in oak casks, of a capacity not exceeding 700 liters for a minimum of three years before it can be called Scotch whisky. To create the unique taste of J&B Rare, our whiskies are matured for much longer. Most importantly, many of the finer malts are reserved and matured for a greatly extended period to add fullness and depth to the flavour of J&B Rare.

Heart
The Heart of J&B Rare is formed from the finest Speyside malt whiskies. To enhance the brand"s elegance of flavour we 「marry」 these whiskies for a whole year. We take the selected malts from the cask, blend them together and put them back together- a unique process providing superior smoothness at the very heart of J&B Rare.




Blend
Forty-two different malt and grain whiskies are crafted together to create the subtle yet rich and complex flavour of the J&B Rare blend. The round, fruity, smooth, restrained taste of the many fine malt whiskies is delicately freshened by some carefully chosen grain whiskies. The whole is greater than the sum of the individual parts, giving J&B Rare a distinctive character, which is different from all other Scotch whiskies.

Consistency
No matter where you are in the world or where you travel, you will find the taste of J&B Rare never varies- it is of a consistently high quality from year to year, north, south, east and west.

Colour
J&B Rare contains the minimum of colouring and is as near as possible the natural colour of the whisky as it comes from the cask.

Taste
Because of its unique creation, J&B Rare is quite different from any other Scotch whisky. It is immediately seen as smoother and has a much more elegant taste. MALTS
Who fancies a 20 year old?
The world"s masterpieces were simply made; a dab of paint on an old canvas and hey presto Van Gogh"s Sunflowers was created. Of course you also needed to be a genius.

The malts that blend to make J&B Rare are from that same school. Just take some water, malted barley and yeast and add 250 years of love, care and experience and you too can produce the drink that the world"s parties swing.

The quality of the distillery"s water supply though has to be primo, it"s this that contributes to a Malt Whisky"s distinctive character. The malt, that is barley that has been soaked in water for two or three days and allowed to germinate is ground in a mill and mixed with heated spring water to create a "mash". The sugary "wort" liquid is drawn off and cooled and passed into large vessels known as "waskbacks". Fermentation by the addition of yeast takes about 48 hours and produces a liquid "wash". It"s then distilled twice in large copper pot stills. And it"s been done like this, more or less, since the dawn of whisky time. Next the malt whisky is matured in oak casks which allow the young spirit to breathe, then after 8 to 12 years it"s ready. Some malts though continue to improve until they"re 20 years old.... some even until they are 25.

GRAINS
Going with the Grain
Grain whiskies are young and carefree, much like a typical J&B drinker.

Unmalted maize is cooked under steam pressure (like a J&B drinker though, pressure is not a problem) and added to the mash fun containing the malted barley. The wort is drawn off and, after fermentation, the liquid is distilled in a Patent or Coffey still. The outcome is a liquid that has its own light, fresh and youthful character that brings a tantalising freshness to the blend.

Of the malt whiskies used, more than 80% are from the Speyside region, an area of Scotland synonymous with the production of the great names in malt whisky. These distinctive and unique malts form the very heart and soul of J&B Rare and are married together in oak casks for a full year before being introduced to their future partner grain and other malt whiskies. The final blend produces an offspring that stimulates and attracts the most admiring glances at dinner tables and parties around the world. J&B Rare is an entirely different strain of blend, no other comes close, with a smoother and more elegant taste.

DISTILLERY
J&B RARE is a blended whisky. It is crafted from 42 individual malt and grain whiskies each chosen both for their personality as fine whiskies and for their ability to bring complexity, style and uniqueness of taste when brought together in a blend.

Blending began in the middle of the 19th century, and enabled distillers to create popular, palatable whiskies of general appeal. Most malt whisky produced in the pot still is too strongly flavoured for everyday drinking, but when combined with milder grain whisky, Scotch whisky with a more sociable, modern style is the result.

There are many stages to creating a perfect Whisky - find out how it"s done using the diagram above - click on each area to find out about it.

1. The barley
Malted barley is used in the fermenting process. In order to create the perfect whisky, the barley must be full, ripe and contain the right proportions of starch and protein.

2. Malting
"Malt" is barley that has been soaked in spring water for two or three day in tanks known as "steeps". The barley then germinates in Saladin boxes or drum maltings, encouraged by warm air blown upwards through the grain, which is regularly turned. Germination takes about 5 days, during which time the starch in the barley becomes soluble, and can be converted into sugar.

3. Peat Kiln
The malting process is ended by drying the malted barley, or "green malt", in the malt kiln. Peat is traditionally one of the fuels used and is the soul of Scotch Whisky. It flavours the spring water that has seeped through it and when dried and used as fuel, it imparts fragrances to the malted barley.

4. Milling and mashing
The dried malt is ground in a mill and the "grist", as it is now called, is mixed with heated spring water at 64 degrees centigrade in a large, circular vessel known as a "mash tun". The soluble starch is absorbed into a sugary liquid, the "wort". This is drawn off, and the remaining solids are removed for agricultural use.




5. Fermentation
After cooling, the wort is passed into "washbacks" that hold between 9,000 to 45,000 litres of liquid. The wort is fermented by the addition of yeast, which attacks the sugar and converts it into crude alcohol. Normally two kinds of yeast are used in this process: traditional brewer"s yeast and dried baker"s yeast.
Fermentation takes about 48 hours, and results in a liquid known as the "wash", containing low-strength alcohol (approx. 7%-8% volume).

6. Distillation
Malt whisky is distilled twice in large, copper pot stills. The wash is heated to 94 degrees centigrade, at which the alcohol becomes vapour. This rises in the still, before being condensed in the cooling plant. The first distillation separates the alcohol, resulting in a distillate with a strength of around 28% volume, known as "low wines". It is passed to another still, but only the middle and finest part of this distillation is retained and collected in the spirit receiver. Now an approximate strength of 75% volume has been reached.

7. Maturation
After distillation, malt whisky is matured. But before the clean spirit is filled into oak casks, it is reduced in strength by the addition of spring water to about 63% volume. The oak casks are porous, and allow the young spirit to breathe. Some evaporation takes place, leaving behind a more mellow and rounded spirit. The eventual character of the whisky can be affected by the size and type of casks used, and the temperature and humidity of the warehouse. To retain its full character, malt whisky should be aged in its region of origin. Maturation for a superior malt whisky takes 8-12 years, although some casks will continue to improve for 20 or even 25 years!

Most importantly, many of the finer malts are matured for over eight years to add fullness and depth to the flavour of J&B RARE.

8. Blending
The objective of the blender is to produce an attractive whisky with a consistent and recognisable character. The blend should never vary.
J&B RARE is made with a blend of six grain whiskies and thirty-six malt whiskies. The blender decides when the different single whiskies are ready to be used. If, like J&B RARE, a blend contains a large number of individual whiskies, the blend will be built up gradually, in blending vats. It would not be possible, or desirable, to blend all the whiskies in one simple operation; after each stage of blending, the whisky is actually returned to the cask and left to "marry" for a certain time. The heart of J&B RARE is married for 12 months in barrels, and the final blend (prior to bottling) is married for 10 weeks.
